Thailand
1. Heat coconut milk ½ cup (100g) in a large skillet or pot over medium heat and stir until fat separation.
2. Add curry paste 2½ tbsp (50g) and stir.
3. Add light coconut milk for ¼ cup (50g) and stir until fat separation.
4. Add about ¾ cup (150g) of chicken or meat and stir the curry paste and meat to combine.
5. Add light coconut milk 1¼ cup (250g) and stir.
6. Add eggplants or other vegetable if desired.
7. Add fish sauce, sugar. Top with red pepper, basil leaves and serve warm.
